It's Fall! Pumpkin Falafel



Putting a spin on 101 Cookbooks Sweet Potato Falafel...since fall is in the air I am using pumpkin! Great as an appetizer or on a pita! I also made a little sour cream/lime/cumin dipping sauce.

Ingredients
1/2 can of Pumpkin Puree
Juice of 1/2 lime
3/4 tsp cumin
3 cloves garlic, minced
3/4 tsp coriander
1/2 cup Garbanzo flour
splash of oil
salt and pepper
sesame seeds




Preheat oven to 400 degrees


Mix all ingredients except sesame seeds together and stick in fridge or freezer until firm. Add more flour if necessary. Spoon into balls and then sprinkle with sesame seeds.



Bake for 15 minutes. Makes about 8 Falafel.

Cinnamon Rolls


I finally found a great recipe for cinnamon rolls. From the Big Sky Cooking cookbook this recipe for delicious sweet rolls turned out better than I expected. The sweet icing is made from heavy cream, sugar and butter on the bottom of the pan that can be drizzled on top after you start taking the buns out of the pan. You can easily freeze half of the recipe for a later time, or leave the prepared rolls in the fridge until you are ready to bake them in the morning for breakfast. This sweet treat will cause you to drool until you have to preheat your own yourself!
prep time: 2.5 - 3 hours to rise, half an hour to assemble and mix
cook time: 15 - 20 minutes
makes: 18-20 rolls

ingredients:
1 1/4 cup milk
1/2 cup shortening
1/2 cup sugar
1 tsp salt
2 packets of active dry yeast
4 eggs
5 cups flour
4 TB butter melted
1/2 cup sugar
2 tsp cinnamon

icing:
1 pint heavy cream
1/3 cup brown sugar
1/4 cup butter softened

Heat milk on stovetop over medium until it is almost simmering. Remove and stir in shortening, sugar, and salt. Cool till lukewarm then stir in yeast until dissolved. Add beaten eggs and blend lightly. Add four cups of flour and mix with a wooden spoon. Put on flour surface and knead about 3-4 minutes. Shape into a ball and place in a buttered bowl and cover. Let rise in a warm place for 1-2 hours. Divide into two portion. Roll out into a rectangle that is 8" x 10". Brush with the melted butter and after combining sugar and cinnamon sprinkle on top. Roll up length wise and slice into rounds. For the icing combine cream, brown sugar, and softened butter and spread on the bottom of a 9" x 13" pan. Place the rolls in pan and let rise for another hour. Either cook now in preheated 370 degree oven for 15 minutes or cover and refrigerate and cook in the morning. I am always testing out my oven for temperatures and estimated cooking times. This recipe says to cook the rolls for 20 minutes, but I know my oven always cooks things faster. Always set your timer for an earlier time cause you can cook something longer, but once it's burned...it's burned. 15 minutes made the moistest, warmest rolls I have ever eaten.

There is nothing better than walking into a house that smells like fresh banana bread! I am also working on my photography skills, as I work part time at an ice cream shop and plan to go back to school!
