It's Fall! Pumpkin Falafel



Putting a spin on 101 Cookbooks Sweet Potato Falafel...since fall is in the air I am using pumpkin! Great as an appetizer or on a pita! I also made a little sour cream/lime/cumin dipping sauce.

Ingredients
1/2 can of Pumpkin Puree
Juice of 1/2 lime
3/4 tsp cumin
3 cloves garlic, minced
3/4 tsp coriander
1/2 cup Garbanzo flour
splash of oil
salt and pepper
sesame seeds




Preheat oven to 400 degrees


Mix all ingredients except sesame seeds together and stick in fridge or freezer until firm. Add more flour if necessary. Spoon into balls and then sprinkle with sesame seeds.



Bake for 15 minutes. Makes about 8 Falafel.
